My wife manages a liquor store, and brings home reps freebies etc.

For a white, you can't beat Margaret River Vasse Felix - it is just sensaish, mate. Goes with anything, is refreshing to drink and sells like buggery when it comes out because it is the vintage from the year before and is the king of Aussie whites. Houghton's White Burgundy (yes, that's right a white burgundy!) runs a good second.

For a red, well, Grange Hermitage is supposed to be the king of Australian reds - it always comes out four years old, is perfect for cellaring for four years, and truly fantastic vintages trade hands for 4 times their retail value (a bottle of '96 Grange will sell for $1300 now). Instead of Grange Hermitage, go for Henscke Hill Of Grace - absolutely superb, every bit the equal of Grange but without the hype and supply dramas. Lovely drop.

Dessert wine - keep an eye out for a sweet dessert wine called De Bortoli 'Noble One' - it's made from grapes affected by the botrytus mould, which makes the grapes sweet. You won't believe how good it is, and it is just perfect with vanilla ice cream.
