Just ordered a Gnet video switch that goes inline between Nav computer and screen, switching in the video source (composite) of choice via flick of a switch at the dash. Will post something whenever I get this installed. Setting up an Ipod to display on the screen and be remote controlled, but similar could be used for other vid devices like laptop. The other issue with the interface to the car screen is the refresh rate. Check this awesome post from one of longtimer E38 board members (at least used to be around here...). Scroll down about half way for the good info. I just don't have the time to work out the details (nor the $ for the TV Module).
