When the MAF is disconnected the DME will likely utilize the throttle position sensor and a default table. It will likely err on enriching the air/fuel mix.

Thus your problem could be the MAF sensor or something else that enriching the mix camouflages, like a vacuum leak.

It might be best to have your car assessed with an analyzer that can read the embedded codes. The dealership can do this with the GT1 machine. Independent mechanics can also have a GT1 or an aftermarket system like Autologic.

You can acquire the fuel trim adjustment values with a high end OBDII system. But if these are off, it could still be the MAF senor or a vacuum leak.

You could replace your MAF sensor and see what happens, but this is an expensive venture.
