Great write-up.

I am not sure why you want to run "cooler" but there may be some downside to going to the cooler thermostat.

BMW (and others) now are trying to keep the temperatures higher than in previous years - the higher the temperature the more efficient the engine operation (to a point). You might notice a slight increase in fuel consumption when running cooler.
The higher temperatures are also to help burn off contaminates - so the enine stays cleaner with less carbon build-up.

The temp gauge is actually buffered in software to read straight up for the full "normal" operating range. If yours is reading to the left slightly then your coolant temp may actually be below 75C at the sensor. This will also affect the operation of your heater system.
You might want to discuss the issue with a knowlegable BMW techician to get their opinion.
