David,
I love this unit - there were only two aftermarket computers I found available in the US that would run a V12.
I know a few people have used a megasquirt, however that requires two seperate units (like the stock system) megasquirt is cheap, will work, and is very tunable, but it's homemade and open source, so you get tech support from the megasquirt community. Like this board, assistance will come, but there's not a single tech line you can call for immediate help.
The two off the shelf solutions are electromotive or http://efitechnology.com/
Electromotive is $2,000-$3000 for a V12, EFI is more like $5000.
My preference is the Electromotive Tec3r. For around $3000 you get a complete solution including trigger wheel, coils, computer, software, etc. This setup manages both the fuel and spark, so you can eliminate both distributors and the pricey plugwires. Plus it's worth a nice boost in HP..
You can adjust everything you can imagine with a laptop and the system will grow with you. If you decide to change intakes to 12 individual throttles it can adjust. If you want to eliminate the airflow meters, it will adjust. I'm not sure about what it will take to get teh stock computer to pick up info for the gauges, but Electromotive has been around a long time and my experience is they provide excellent support.
You can download their manual showing setup and tuning at their website here:

Hope that's helpful!
Chelle
